Ossi Paloneva is an influential forerunner and a pioneer in all-ecological cooking in the Finnish food scene. Ossi has been building phenomenas such as waste food, wild food, vegan cooking, seasonal and organic food, insects, food as an art form, restaurant pop up culture and food activism. Ossi’s former restaurant VILLD is to the date the only 100% plant based fine dining level restaurant in the Finnish culinary history. These days Ossi acts in foodtech space as a co-founder of @molt_foodtech, that aims to establish the standard taste of plant based molded products.
