Asaf is a trained chef who has cooked at some of Israel’s most celebrated culinary establishments (Moul Yam, Brut, etc.). He is a graduate of Harvard University’s “Science of Cooking” program and over the last four years has been focusing on the use of fermentation for the creation of next generation flavor materials with dedicated sensorial qualities for the growing meat replacement sector, as well as for modulation of sweetness, bitterness, and fat perception.
