Anja Leissner, Co-Founder and Head of R&D at Stockeld Dreamery, has a background in biotechnology, food science, microbiology, sensory methodology and nutrition. She specializes in dairy processing and technology, having been engaged at Lund University (LTU) and having worked in the dairy industry with formulation of plant oil solutions and flavouring. After immersing into the nascent world of plant based proteins, Anja emerged with the conviction that significantly better plant based products were possible. Meeting Sorosh she realised she is not only a nerd but also an entrepreneur. Together they decided to start Stockeld Dreamery with the purpose to crack one of the hardest challenges in the food industry – to make delicious and nutritious cheeses using only plants. With a solid passion for sustainability, nutrition and product development, she also acts as a mentor for other startups. Her deep interest in food combined with having the heart of a tiger makes her a force to be reckoned with in the mission of making great cheese. Anja is a mentor to other start-ups, is a passionate kombucha drinker and fermentation promoter, and has a limitless belief in human potential.
